quinoa asparagus salad

Sometimes I discover a new food and get totally obsessed and ask myself how I survived 23 years without eating it. That's what happened to me with quinoa the other day. So far I've only tried it in a casserole and in salads but I love it and can't wait to try even more recipes.

I bought fresh asparagus today and of course I had to try it with quinoa. I have a pinterested board for my latest food obsessions and found a bunch of quinoa salads with asparagus. I looked at a couple recipes and came up with this yummy salad. Here's how I made it:

Easy Quinoa Asparagus Salad (serves 2)

Ingredients:
1/2 cup quinoa
olive oil
green asparagus (I used 7 spears)
lemon juice (freshly squeezed)
frozen peas
chopped almonds
one avocado
fresh basil
salt + pepper
some honey dressing

Directions:
1. Cook the quinoa according to the directions on the package and set aside to cool.
2. While cooking the quinoa, chop your asparagus into bite-size pieces and roast in a pan with a tbsp of olive oil over medium heat. Add the frozen peas(I used about had a cup), a handful of sliced almonds and lemon juice from half a lemon. Set aside.
3. Dice the avocado.
4. Mix the quinoa, asparagus and avocado in a large bowl, add fresh basil, some garlic and salt + pepper to taste. Pour some dressing over it and enjoy!

Here's my go-to honey dressing:
2 tbsp olive oil
freshly squeezed lemon juice (from half a lemon)
some honey
chopped fresh basil
salt + pepper

Combine all the ingredients in a container that has a lid and closes properly. Shake well. VoilĂ .
